We present a home-style version of a drink featured on a new menu. It's a party-sized pre-mixed which is packed with the essence associated with Christmas time, which makes it perfect for hosting a celebration. Reserve the remaining citrus syrup to use in breakfast cocktails, sweets, or to make another batch of this cocktail.

Makes enough for 10 guests
Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Put every items inside a pan, heat until it reaches a simmer, agitating to dissolve. Then, take off the stove allowing it to cool fully. Pour into an sealable bottle, close it keeping it chilled, it will last for around one month.
Preparing the Batch Mix: Pour every liquid ingredients into one sizeable container, let it rest for one hour, then filter it , ideally through cheesecloth, making it completely strained.
To serve: Add 85ml of the batch mix into a mixing glass containing ice, and agitate carefully for one minute to cool it down. Pour into an frosted cocktail glass or a similar vessel, garnish with a few cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
